As the Phnom Penh Post Newspaper put it: 'It takes a brave man to open yet another restaurant in the already crowded Siem Reap marketplace, but France's Nicolas Devaux is undaunted.'
After moving from the French Alps (where he also ran a restaurant) in January, Nicolas opened Chamkar in July 2008 with a former chef from the outstanding Meric restaurant (Hotel De La Paix). The understated restaurant has a small but well selected (and vastly under priced) menu of semi-traditional Khmer food through which Nicolas' French background shines through the Khmer produce with traditional tastes getting an amazing work over (read: improvement). All ingredients are organic when available (including some of the wine), and nothing (save the incredible grilled papaya) is cooked in advance, meaning the dish you are served could not be fresher. A generous three course meal for two with drinks is about $US30, unprecedented in this country for it's standard (the nearest rival must be Meric). In sympathy for the vegetarian traveller faced with a hotel menu containing nothing without fish sauce, Chamkar also offers a takeaway service, and orders can be made by telephone.
We could not recommend a new restaurant more highly. If only France had more such places!
